Well guys…I mentioned earlier that the sparse number of deals kinda called out the need for casseroles on the ol’ menu this week.
I have shared this recipe for Poppy Seed Chicken Casserole before and thought I would dust it off and remind you all about it. This is one of the most popular casseroles at my house. Well…it’s popular with my guys. I always serve it with a salad and save a little chicken and I have a dinner salad.
I am not a sour cream gal so I skip this one. But since my guys like it, I make it for them. When I saw the BOGO sale on Ritz Crackers I figured it was a good week to put it on the menu. I also took the opportunity to whip up a video just so you could see how simple this one is to make. With the sale and ease of prep…you really gotta try this one.
A little tip…try this with Ritz Everything Crackers for an extra punch of flavor. I have decided they are my new favorite thing. I have a sleeve saved to eat with some brie and apples–YUM! Well…as long as my guys don’t find them before I get to the store!

- 2 1/2 – 3 cups cooked chicken, cubed
- 1 10.5 oz can cream of chicken soup
- 16 oz sour cream
- 2 teaspoons poppy seeds
- 2 sleeves of Ritz Crackers, crushed
- 1/2 cup butter, melted
- Cooked rice
- Preheat the oven to 375º F.
- Mix the cubed chicken, soup, sour cream and poppy seeds in large bowl.
- Spread the mixture into a buttered casserole dish.
- Mix the crushed crackers with the melted butter.
- Sprinkle the buttered crackers over the top of the chicken mixture.
- Cover with foil and bake for 15 minutes.
- Remove the foil and bake an additional 20 – 30 minutes – until the casserole is bubbly and crackers are golden brown.
- Serve over cooked rice.
