Obviously you need some chicken. I keep things super simple and just use a rotisserie chicken from the Publix Deli. It’s the easiest option and means there is no cooking required. Because this is a pimento cheese version, you need pimento and some kind of cheese. In the south, good ol’ yellow cheddar is the norm. But, feel free to mix it up and go with any cheese that you love.

My recipe is the perfect amount for a small group. Feel free to double if you need more…or if you want to ensure you have leftovers to enjoy after the game!
- 1 cup chicken, shredded
- 8 oz cheddar cheese, shredded
- 4 oz cream cheese, softened
- 1/2 – 3/4 cup Hellmann’s Mayonnaise
- 1/4 teaspoon cayenne pepper
- 1/4 teaspoon onion powder
- 1/4 teaspoon garlic powder
- 6 oz pimentos, drained
- salt & pepper to taste
- Bread, crackers or veggies for serving
- Combine all ingredients in a bowl and mix to combine.
- Serve on bread, with crackers or veggies.
