Besides being incredibly economical, pasta is super versatile. There are so many different ways to serve up pasta. You could easily eat pasta every single day and never repeat the same recipe. Of course we all have our favorites that get repeated often. I typically go with ones that are quick and easy so that I can get in and out of the kitchen fast.
One of my all-time favorite recipes is this Spaghetti with Chicken, Pesto and Crumbled Goat Cheese. This recipe is made with the quick-cooking angel hair pasta so dinner comes together in about 15 minutes. You don’t always need a lot of time to get big flavor. The combination of the pasta with the pesto, peas and that amazing goat cheese makes for a flavorful meal with very little effort.
And since you only need a few ingredients, it’s also a very economical option. Grab the ingredients and add this one your menu this week.

- 1 pkg (16 oz) Ronzoni® Angel Hair
- 1 cup frozen peas
- 1 lb boneless, skinless chicken breasts, thinly sliced
- ½ tsp salt
- ½ tsp pepper
- 2 Tbsp olive oil
- 1 cup basil pesto
- ½ cup goat cheese, crumbled
- Cook pasta according to package directions, adding peas in the last 2 minutes of cooking. Drain, reserving ⅓ cup cooking liquid.
- Meanwhile, season chicken with salt and pepper. Heat oil in large skillet set over medium heat; cook chicken for 5 to 8 minutes or until browned and cooked through.
- Toss together chicken, pasta and peas, reserved cooking liquid and pesto. Divide among dishes; sprinkle goat cheese over top.
