Chicken and bacon are two of my absolute favorite proteins to work with in the kitchen. So it’s only natural that I love finding ways to combine them. Wrapping the chicken with bacon is always a popular option, but when you stuff it with a sweet and salty mix, you end up with a meal that will take you on a trip back to your favorite island getaway!
My Bacon Wrapped Aloha Chicken Bombs are served over rice with a tropical pineapple salsa that includes bright, sunny pineapple and diced veggies. The combined flavors are nothing short of sublime, particularly when the sweetness of the pineapple meets the savoriness of the bacon. Pair it with your favorite fruity cocktail or mocktail and you’ve got a meal that everyone will love.
- 6 boneless, skinless chicken fillets
- 1 pound Hatfield Bacon
- 1/2 cup fresh pineapple, crushed
- 6 oz cream cheese, softened
- 1/2 cup havarti cheese (or any mild cheese that you love)
- [u]Pineapple Salsa[/u]
- 1 1/2 cups fresh pineapple, diced
- 1 sweet bell pepper, diced
- 1/4 cup onion, diced
- 1 jalapeño, seeded and diced
- 1 clove garlic, minced
- 1/4 cup cilantro, chopped
- juice of 2 large limes
- pinch of cilantro
- salt and pepper to taste
- Make the pineapple salsa by mixing all ingredients in a medium bowl. Set aside until ready to serve.
- In a medium bowl, mix the cream cheese, Havarti cheese and the crushed pineapple.
- Pound the chicken between parchment paper until about 1/2 inch thin.
- Top each pounded chicken fillet with the pineapple & cheese mixture.
- Starting from the short end roll the chicken tightly.
- Wrap each chicken roll with 2 – 3 slices of Hatfield Bacon. Be sure to alternate each strip to cover the whole piece of chicken and tuck the ends under the side of the bacon strip.
- Heat your grill to medium (about 375º) and grill the chicken over indirect heat for about 20 minutes, turning every 4 minutes.
- Be sure chicken is cooked through and juices run clear.
- Serve the chicken over rice with the prepared pineapple salsa
