Watermelon, Feta & Rice Salad
Ingredients
LEMON VINAGRETTE
- 1/4 cup fresh lemon juice
- 2 tsp Dijon mustard
- 1/2 tsp honey
- 1 clove garlic - minced
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1/4 cup olive oil
SALAD
- 2 cups watermelon - cubed
- 2 pouches TILDA® READY TO HEAT PURE BASMATI RICE - cooked according to package directions and cooled
- 1/4 cup red onion - thinly sliced
- 2 tbsp fresh mint - torn
- 1 cup arugula
- 6 oz feta - crumbled
Instructions
LEMON VINAGRETTE
- Place the lemon juice, Dijon mustard, honey, garlic, salt and pepper into a small bowl and whisk to combine. Slowly drizzle in the olive oil and mix until emulsified. Season to taste.
SALAD
- Add all salad ingredients to a large bowl and gently toss with the prepared lemon vinaigrette. Serve and enjoy!
