When the weather is hot, I like to take the cooking outside. For me, grilled foods and summer just go hand in hand.
But, there are so many options when it comes to what to throw on the grill. Burgers, chicken and hot dogs are always great on the grill. And while tasty, they just can’t compare to a perfectly grilled steak.
A good steak is easily prepared with a simple seasoning of salt and pepper. Pair with a salad or a baked potato and you have a great meal with very little effort. BUT, if you want to take things up a notch, use that steak to make a hearty Cheesy Steak Sandwich.
This is one of my favorite ways to give my family the taste they love without breaking the bank.
Steaks for 4 people can be quite expensive. But, with my Cheesy Steak Sandwich recipe, I can use half the meat and my guys still get a super hearty meal that they love. In fact, I think my boys would probably choose this sandwich over a basic steak anyway. Given the choice between a grilled steak or a steak sandwich with onions that’s then topped with the melty goodness of Tillamook Cheese, they will choose the sandwich every time!

Cheesy Steak Sandwich
Ingredients
- 12 oz steak - New York Strip, Ribeye, Sirloin, etc
- salt & pepper
- olive oil
- 2 small ciabatta loaves (or 1 large loaf) - halved lengthwise
- 2 sweet onions - cut into thick 1/2" slices
- 8 slices Tillamook Farmstyle Extra Sharp White Cheddar
- 1/4 cup Horseradish Sauce
Instructions
- Season the steak with salt and pepper and grill over high heat cooking until golden brown and slightly charred, 4 to 5 minutes. Turn the steaks over and continue to grill 3 to 5 minutes for medium-rare. Allow to rest for 5 minutes before cutting into thin slices.
- As the steaks cook, brush the onion slices with olive oil and place on the grill. Cook for 4 minutes, per side until slightly charred and softened.
- While the steak rests, toast the bread on the grill.
- To build the sandwich, spread 2 tablespoons of the horseradish sauce over the bottom layer of the toasted bread.
- Add half of the sliced steak and half of the grilled onions.
- Top with 4 slices of Tillamook Farmstyle Extra Sharp White Cheddar and then add the top bread layer.
- Place the sandwich back in the unlit grill, close the lid and allow the residual heat to melt the cheese.
- Remove the sandwich from the grill, slice and serve!
