Parmesan Panko Crusted Cod
Ingredients
- 4 boneless fish fillets (5 - 6 oz portions)
- 1/2 cup Hellmann's or Hellmann's Light Mayonnaise
- 1 tbsp lemon zest
- 2 tbsp fresh parsley - chopped
- 1/2 tsp black pepper
- 1/2 cup grated parmesan
- 1/2 cup seasoned panko breadcrumbs
Instructions
- Preheat oven to 400º F and lightly spray a sheet pan with cooking oil.
- In a small bowl, add the Hellmann's Mayonnaise, lemon zest , parsley and black pepper and mix to combine.
- In another small bowl, add the Parmesan and panko and mix to combine.
- Pat each fish fillet with paper towels to dry and place on the prepared sheet pan.
- Divide the mayonnaise mixture and spread atop each fish fillet.
- Top with the panko mixture, pressing lightly to help adhere to the fish.
- Bake for 15 - 20 minutes, until the fish flakes with a fork. (Bake time can vary based on the thickness of the fillet.)
