This dish is one of my favorite things for a quick and easy meal. It’s hearty and fresh and such a nice change of pace from the usual Friday Pizza Night. There’s no delivery fees and it can be done without heating up your kitchen… that’s important with heat of the summer kicking in!
Havarti & Peach Grilled Flatbread
Ingredients
- 4 peaches - halved
- 1/2 tbsp olive oil
- 2 large flatbreads
- 1/2 cup pesto
- 4 oz thinly sliced prosciutto
- 4 oz Amish Country Havarti - shredded
- 1/2 cup arugula
- hot honey - for serving
Instructions
- Heat your grill to medium high.
- Brush the peaches with olive oil and grill for 2 - 3 minutes per side, until lightly charred. Remove from grill and slice into wedges.
- Spread 1/4 cup of pesto on each flatbread then top each with 2 oz prosciutto, 2 oz of shredded cheese and the grilled peach slices.
- Place the prepared flatbread on the grill and cook for 2 - 3 minutes, until the flatbread has a light char and the cheese is melted.
- Remove from the grill, sprinkle arugula over the flatbread and drizzle with hot honey. Slice, serve and enjoy!
