Maple Syrup Spiced Cupcakes
Ingredients
Maple Syrup Spice Cupcakes
- 2 1/2 cups all-purpose flour
- 2 tsp baking powder
- 1 tsp baking soda
- 1/2 tsp salt
- 2 1/2 tsp Spice Islands Cinnamon
- 1 tsp Spice Islands Ground Ginger
- 1/2 tsp Spice Islands Ground Nutmeg
- 1/2 tsp Spice Islands Ground Cloves
- 1 cup oil
- 1 1/4 cups brown sugar
- 3/4 cup Spring Tree Pure Maple Syrup
- 2 1/2 tsp Spice Islands Pure Vanilla Extract
- 1 cup zucchini, grated
Cream Cheese Frosting
- 1/2 cup unsalted butter, softened
- 8 oz cream cheese, softened
- 1 tsp Spice Islands Pure Vanilla Extract
- 1/2 tsp salt
- 4 cups powdered sugar
- 1/2 cup chopped pecans or walnuts, if desired
Instructions
Maple Syrup Spice Cupcakes
- Preheat oven to 350º F and line two cupcake pans with liners.
- In a medium bowl, whisk together the oil, brown sugar, maple syrup, eggs and vanilla.
- In a separate large bowl, add the flour, baking powder, baking soda, all spices and salt to a large bowl and whisk to combine.
- Add the wet ingredients to the dry ingredients and mix to combine then fold in the shredded zucchini.
- Spoon or scoop the prepared batter into the cup cake liners. Bake for 20 - 22 minutes, until a toothpick inserted in the center comes out clean.
- Allow to cool completely before frosting.
Cream Cheese Frosting
- Add the butter and cream cheese to the bowl of a stand mixer and mix until smooth and creamy.
- Add the salt and vanilla and mix to combine.
- While the mixer is on low, gradually add the sugar until completely incorporated.
- Pipe or spread onto cooled cupcakes. Top with chopped nuts, if desired.

The holidays are all about spending quality time with loved ones. But, who wants to be stuck in the kitchen all day? That’s where easy, crowd-pleasing recipes come in handy. I love a good casserole for the ease in prep and the fact that they can serve a lot of people without a lot of effort. Plus since they can be prepared in advance, you have more to spend more time socializing and less time slaving over a hot stove.
A hearty strata is my recipe of choice when I need to feed a group for breakfast or brunch.
Don’t be intimidated by the name, a strata is just a casserole of bread and egg with tasty fillings like meats, cheeses and veggies. Think of it as a savory bread pudding that you can customize however you like!
While I vary my fillings, a must-have for all of my strata recipes is Eggland’s Best 100% Egg Whites. They’re made from farm-fresh eggs from hens that eat a healthy, all-vegetarian diet of healthy grains. Their feed contains no added hormones, antibiotics or steroids, and no animal by-products, recycled, or processed foods. Easy to use, they are the easiest way to whip up a delicious strata in no time flat!
I am sharing my Ham, Spinach & Cheese Strata below. Feel free to add or modify as you’d like to make it your own.
Ham, Spinach & Cheese Strata
Ingredients
- 1 tsp olive oil
- 1 small onion - chopped
- 12 oz baby spinach
- 1 red bell pepper - chopped
- 1 loaf Italian Bread - crust removed and cubed
- 1 1/2 cups Eggland's Best 100% Egg Whites
- 2 cups whole milk
- 1/2 cup heavy cream
- 1 tsp salt
- 1/2 tsp black pepper
- 1 cup chopped ham
- 1 cup sharp cheddar cheese, shredded
- 1 cup fontina cheese, shredded
- 1/4 cup parmesan cheese
Instructions
- Lightly grease a 3-quart baking dish with cooking spray; set aside.
- Heat the oil in a large non-stick skillet and cook the onion and bell pepper for 2 - 3 minutes, until softened. Add the spinach and cook until wilted. Remove from heat.
- Layer bread cubes, cooked veggies, ham, and cheeses in the prepared baking dish.
- In a large bowl, add the egg whites, milk, heavy cream, salt and pepper and whisk to combine. Pour over bread mixture. Cover and refrigerate for 8 hours to overnight.
- Preheat the oven to 350º F. While the oven is heating, let casserole sit at room temperature for at least 30 minutes before baking.
- Bake the casserole in the preheated oven for 1 hour - 1 hour and 15 minutes, until a knife inserted in to the center comes out clean. Let the casserole stand for 10 minutes before serving.
