Chicken Tortilla Pie

Ingredients
  

  • 10.8 oz package Gary's QuickSteak Chicken
  • 10 oz can diced tomatoes with green chilies
  • 1 tbsp chili powder
  • 2 teaspoons cumin
  • 1 tsp salt
  • 1/2 tsp paprika
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder
  • 1/4 tsp dried oregano
  • 1 cup black beans
  • 1 cup corn - canned or frozen
  • 8 oz Colby jack cheese shredded
  • 1/4 cup black olives

Method
 

  1. Preheat oven to 375º F.
  2. Heat a large skillet over medium high heat and cook Gary's QuickSteak Chicken according to package directions.
  3. Add the tomatoes with chilies, corn, black beans and all seasonings to the pan.
  4. Stir and cook for about 5 minutes, until some of the liquid has absorbed. It's Ok for some liquid to remain. Remove from heat.
  5. Place one tortilla in the bottom of a pie plate or round dish that has been sprayed with cooking spray.
  6. Add a third of the meat mixture then top with a third of the olives and about a quarter of the shredded cheese.
  7. Add another tortilla and repeat the layers twice, ending with a tortilla.
  8. Sprinkle the remaining cheese over the top tortilla and bake for 10 minutes, until cheese is bubbly.
  9. Serve with desired toppings.
