Ham & Cheddar Biscuits

Ingredients
  

  • 8 tbsp unsalted COLD butter frozen & grated
  • 2 1/2 cups all purpose flour
  • 2 tbsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp salt
  • 1 cup buttermilk
  • 7 oz Wyke Farms Vintage Reserve Cheddar Cheese shredded
  • 3/4 cup diced ham
  • 1 tbsp chives chopped
  • 1 - 2 tbsp melted butter

Method
 

  1. Preheat oven to 450°F. Line a baking sheet with parchment paper and set aside.
  2. In a large mixing bowl, add flour, baking powder, baking soda and salt and whisk to combine.
  3. Use a box grater to shred the frozen butter. Working quickly, stir the COLD shredded butter into the flour mixture with a fork until evenly distributed.
  4. To the bowl add the diced ham, Wyke Farms Vintage Reserve Cheddar Cheese and chives. Stir until coated with flour and evenly distributed.
  5. Create a well in the flour mixture and pour in the buttermilk. Use a rubber spatula to gradually mix the buttermilk into the dry ingredients, just until combined.
  6. Turn out the dough onto a lightly floured nonstick surface. Work the dough with your hands, mixing a couple of times just to bring everything together so that the dough is not dry and crumbly.
  7. Roll the biscuit dough into a circle that's approximately 3/4-inch thick. Use a 3-inch biscuit cutter to cut the dough. Combine any scraps and cut into rounds, until all of the dough has been used.
  8. Place the cut dough rounds so that they are touching on the prepared pan.
  9. Bake for 15 -16 minutes or until golden brown.
  10. Once you remove the biscuits from the oven, immediately brush the tops with melted butter.
  11. Serve & enjoy!
