Salmon & Rice Foil Packets

Servings: 4

Ingredients
  

  • 1 pkg Knorr Chicken Flavored Fried Rice
  • 2 cups chicken broth
  • 1 cup carrots - cut into slices or matchsticks
  • 1 cup pea pods
  • 1 lb salmon -cut into 4 fillets
  • 2 tsp salt
  • 1 tsp black pepper
  • 4 tsp butter

Method
 

  1. Place the Knorr Chicken Flavored Fried Rice into a bowl and stir in the chicken broth. Allow to sit for 10 minutes to absorb some of the liquid.
  2. Cut 4 large 18"x18" sheets of heavy duty aluminum foil.
  3. Divide the rice and spoon into the center of each of the 4 foil sheets.
  4. Divide the carrot and pea pods and place next to the rice.
  5. Season each salmon fillet with salt and pepper and place atop the rice
  6. Place a teaspoon of butter on each salmon fillet.
  7. Create the foil pouch by folding the top and then the sides, sealing the pouch tightly yet leaving room for air to circulate.
  8. Place on a grill heated to medium high and cook for 10 minutes.
  9. Carefully open the packets and enjoy!
