Preheat oven to 400ºF.
Place the sweet potatoes in a large saucepan. Add water and cover by 2 inches. Bring to a boil and cook the sweet potatoes 5 minutes, until fork tender. Drain and set aside.
While the potatoes are boiling, heat 1 tbsp of oil in a large oven-safe skillet and then add the cubed pork. Sauté for 5 - 6, minutes until the pork is browned. Remove from skillet and keep warm.
In the same skillet, heat the remaining oil and add the cooked sweet potatoes, bell pepper and season with salt and pepper. Cook for 8 - 10 minutes stirring occasionally, until the peppers have softened and potatoes are browned.
Add the pork back to the pan and stir to combine.
Create 4 wells into the hash and add a cracked egg into each hole.
Place the pan in the oven and bake until eggs are cooked to your liking, about 5 - 7 minutes. Serve immediately.
